Competitor’s Kitchen: Molasses Apple Raisin Baked Oatmeal

For as long as I can remember as a competitor, oatmeal was part of my meal-plan. With every revision came more oats, and though I loved them plain, I loved them even more all “dressed up.” This is one of my favorites. I will often make 3-4 servings at a time. You can buy single-serving oven proof dishes in the open stock section of Target or Walmart for only a couple of dollars each.

Ingredients:
• 3 tbs nonfat Greek yogurt
• 1/3 cup old-fashioned oats (can substitute gluten-free oats if gluten sensitive)
• 2 tbs unsweetened applesauce
• ¼ cup egg white substitute or my favorite (Egg Whites International)
• 1 tsp molasses
• 1/8 tsp ground cinnamon
• ½ tsp baking powder
• ½ tsp pure vanilla extract
• 5g chopped walnuts
• 5g golden raisins
• ¼ cup water
• dash sea salt
• additional dollop Greek yogurt (not included in nutritional breakdown)
*Makes 1 serving

Directions:
Combine all ingredients in an oven proof single-serving bowl and bake in an oven preheated to 350 for 25-30 minutes or until top of baked oatmeal is firm to touch.
